Our shop uses everything from Hokkaido, from buckwheat flour to binder, etc.! Hokkaido is the number one producer of soba in Japan. Hokkaido is rich in nature and clean water, and these environments are suitable for growing soba. In particular, the cold climate is suitable for growing good quality soba. Hokkaido soba has been praised for its excellent flavor and texture.

Soba grown in Hokkaido is grown using rich soil and mineral-rich water produced by the cold climate. As a result, the noodles are rich in flavor and have a firm texture. Experience traditional Japanese food from the Edo period, and soba making, which is popular among them, in a fun and casual way!
